Edwin Burchett

I think you are either born with the passion for food or not. I’ve been passionate about food for as long as I can remember. Food has always been a prominent part of the lifestyle within the immediate and extended Burchett family. Stephanie Alexander is a cousin.

I have fond memories of holidays at Rosebud and Mary Burchett’s (Stephanie's mother) cooking, beehives and geese.

As my interest grew I immersed myself in the works of Elizabeth David, Jane Grigson and later Julia Child’s ‘Mastering the Art of French Cooking’ (the original publications).

Whilst House Manager at Victoria Golf Club (one of the few residential clubs in Melbourne), I completed my studies in catering at William Angliss.

Long hours and changing family circumstances led me to Bayleaf Catering - at the time one of Melbourne's leading corporate caterers.  I was there from 1996 through to 2005, starting as floor staff for boardrooms and functions, eventually cooking on site.  I later moved into the production kitchen and was sous chef there when Bayleaf won Corporate Caterer of the Year, in consecutive years 2004 and 2005.
